Chef – Japanese Cuisine ________________________________________ Description At the heart of Shizuku https://shizuku.ca/ lies an impressionist approach to the culinary arts. Blending tradition with modernity, executive chef Kodie Kazuki Wan brings a global influence to his continual pursuit of mastery over his craft. Of Japanese and Hong Kong descent, a delicate interplay between different cultures can be experienced, evoking a sense of tradition while striking out a new frontier for omakase dining. Job Details Role: chef-Japanese Cuisine Main Tasks • Estimate food consumption to schedule purchases and requisition of raw materials, minimize waste and spoilage to expenses in line with budget. • Manage food costing for individual dishes • Prepare ingredients and cook food, and ensure that all dishes are cooked well and presented in an aesthetically pleasing way • Establish appropriate service standards, train, and motivate the front of the house to demonstrate these standards while carrying out their duties • create innovative and exciting menus, providing a balanced range of cuisines to meet customer requirements while providing quality in taste, temperature, and presentation • break down, treat and store different type of fish and preparation of other sea foods • Maintain kitchen order and hygiene by ensuring the cleanliness of tables, counters, and all work areas • Coordinate with the front of the house to ensure an efficient flow of orders • Support and assist the executive chef with daily operations • Monitor equipment performance and order replacements as and when needed • Support and assist the Executive Chef in ordering ingredients from Japan through our Japanese suppliers • Provide training for new kitchen staff Job Requirements • Culinary diploma or certificate • Familiar with Japanese ingredients, preparation techniques, and practices in Japanese cuisine • Excellent customer service skills • Good interpersonal skills including the ability to effectively communicate in English Details Salary : $70,000/year including 2-week paid vacation Schedule: Full-time, 44 hours/week Location: 2950 Kennedy Road, Toronto, Ontario M1V 1T1
